Ingredients

1 tbsp vegetable oil
2 cloves of garlic (finely chopped)
1 onion
1 red chili
1 tin of coconut milk
300ml vegetable stock
1 tbsp Tomato puree
2 sweet potatoes (chopped into cubes)
400g Cauliflower (florets)
5 tbsp red lentils
3 tsp medium curry powder
1 lime (for juice)
Coriander (cilantro) (for garnish)
white rice (to serve)

Fillings

Method

  1. Heat the oil in a deep frying pan and add in the onions and garlic and cook on a high heat for 1-2 minutes.
  2. Briefly steam the cauliflower for 4 minutes so it has begun to soften
  3. Add the Cauliflower, sweet potatoes, lentils, red chili, tomato puree and curry powder to the frying pan, and pour in the stock and coconut milk.
  4. Bring the mixture to the boil and stir, then drop the heat down and let it simmer for 15 minutes.
  5. Squeeze the juice of half a lime over the curry and sprinkle on some coriander, and serve!
