Pea soup

Ingredients

900g of frozen peas
2 Chopped leeks (or white onions if you don’t have leeks available)
2 vegetable stock cubes
1 tbs olive oil
1 garlic clove (chopped)
50ml double cream

Notes

  • Prep time: 5-10 minutes
  • Cook time: 30 minutes
  • Serves: 6

This soup freezes well so it’s great for making in large batches and meal prepping. Serve with warm crusty bread or change things up with the optional toppings and spices below.

Method

  1. Chop the leeks (or onions if using) and and fry with the chopped garlic and olive oil in a large soup pan for 5 minutes on a medium high heat
  2. Once the leeks have begun to soften, add the peas and stir well
  3. Mix the 2 stock cubes into 1 litre of boiling water and pour over the veg, and let it simmer for 25 minutes.
  4. Using a sick blender (or regular blender), blend the soup until completely smooth
  5. Once the soup is smooth, pour in the double cream and stir.
