Sausage & Cannellini Bean Casserole
An easy one pot casserole recipe that saves on the washing up! Delicious and filling, this recipe is great for cooking for the whole family or for batch cooking and topping up the ready to heat freezer meals! Ingredients
1 tbsp olive oil
2 garlic cloves (finely chopped)
400g tin chopped tomatoes
400g tin cannellini beans
400ml chicken stock
2 tsp smoked paprika
8 pork sausages
1 onion (diced)
2 sticks of celery (chopped)
2 carrots (chopped)
100g fresh spinach leaves

Choosing your fillings
When picking out your sausages, look for high quality pork with a high meat percentage. You can use plain pork sausages or pre-seasoned and mixed with herbs, and they will blend into the smoky stew nicely.

Method
- Preheat the oven to 200C
- Heat the olive oil in a large pan, and add the chopped onion and garlic and fry for 3 minutes on a high heat.
- Add in the celery and carrots and heat for another 5 minutes.
- Add the sausages and fry until the outsides have browned.
- Add in the cannellini beans, paprika and chopped tomatoes, stirring thoroughly.
- Pour the stock in, and add the spinach leaves.
- Stir well and transfer to the oven for 40 minutes with the lid on the pan.
