Shakshuka is a vibrant and flavorful dish that’s perfect for a quick and easy healthy dinner. Ingredients

2 tbs olive oil
3 garlic gloves
1 large onion
1 red bell pepper
2 tins chopped tomatoes
4 eggs
1 tsp paprika
1 tsp smoked paprika
1 tsp cumin
1/2 tsp chili powder
Fresh coriander leaves (for garnish)

Notes

  • Prep time: 5-10 minutes
  • Cook time: 20 minutes
  • Serves: 4

Serve with warm crusty bread or flatbread

Spices

We’ve added some smoke paprika to this shakshuka for a smoky twist on the classic recipe. The smoked paprika adds a deeper flavor that complements the tomatoes well, but if you don’t like smoky flavors, just swap this out for regular paprika.

You can adjust the spice level to suit your tastes, we’ve gone for a mild spice with 1/2 of chili powder, but just increase this if you like more of a kick, or take the chili out if you’re not a spice fan – the recipe is flexible!

Method

  1. Add the onion and garlic to a frying pan with the olive oil and cook for 5 minutes until the onions begin to brown.
  2. Add in the red pepper, tomatoes and spices and stir thoroughly, then let it simmer on a medium heat for 10 minutes.
  3. Make 4 wells in the tomato and crack an egg into each one. Pop the lid on the frying pan and leave to simmer for 6 minutes.
  4. Sprinkle on your coriander leaves and serve.
